Bake! Parkin cake

This week I made a tasty parkin cake for the office to share. Find out how to make this northern cake!

This week, I decided to bake a northern cake for the office... Parkin!

And by all accounts, the parkin cake that I made this week went down well...

Here is the recipe so you can make it too.

Recipe

Makes: 16 squares

Ingredients:

  • 225g self raising flour
  • 110g caster sugar
  • 1tsp ground ginger
  • 1tsp bicarbonate of soda
  • 1 egg
  • 200ml milk
  • 55g butter
  • 110g golden syrup

Method:

  1. Preheat the oven to 150°C/300°F/Gas 2.
  2. Grease a deep 22cm/8" square cake tin and line with non-stick baking paper.
  3. Sieve the flour, sugar, ginger and bicarbonate of soda into a large mixing bowl. Make sure there are no lumps!
  4. In a small pan, over a gently heat, melt the butter and golden syrup until combined. Set aside.
  5. Beat the egg into the milk and set aside.
  6. Gradually pour the butter and syrup into the flour. Stir well until the mixture is well mixed.
  7. Pour in the egg and milk and stir until the mixture is smooth.
  8. Pour the mixture into the lined tin.
  9. Bake for about one hour, or until a skewer comes out clean from the centre of the cake.

And that's all there is too it!

Quite a simple little cake which packs lots of flavour, ideal for a hungry office waiting for their weekly bake!
